Zhenjiang and Yangzhou, two cities in Jiangsu Province, China, are known for their rich history and food culture. Among the most famous dishes are Guogai Noodles and Yangzhou Fried Rice, both of which reflect the flavours and culinary traditions of the region.

 

Guogai Noodles are a popular dish in Zhenjiang and one of my personal favourites in China. The noodles are typically served in a savoury broth and are often topped with tender pork, fresh vegetables, and herbs. The unique flavour comes from the use of Zhenjiang's famous vinegar, which adds a perfect balance of sourness to the dish. The combination of sweet, sour, and savoury flavours gives the dish it’s iconic flavour and is truly a meal to be savoured.

 

Yangzhou Fried Rice, originating from nearby Yangzhou city, is another beloved dish in the region. It’s made with stir-fried rice mixed with with shrimp, pork, vegetables like peas and carrots, scrambled egg and a light seasoning. The dish is colourful, flavourful and packed with protein. The fried rice is not only delicious but also a great example of how Chinese cuisine focuses on harmony between texture, colour, and taste.

In conclusion, Guogai Noodles and Yangzhou Fried Rice offer a delicious glimpse into the rich food culture of Jiangsu Province, and showcase just a drop in the ocean of China’s many delicious dishes.
